if you're going with an oil finish i'd recommend waterlox original (also known as sander/sealer). if you can't find that any tung oil based product should work. with oil finishes you just wipe them on with a cloth. follow the instructions on the can. it's the easiest finish to do. oil finishes normally do have a satin sheen. oil finishes are my personal preference.

to get a really good gloss finish is when you'd have to spray probably. and you can buy cans that are ready to spray.

check out:
http://www.reranch.com for more information on spraying, and they also sell the products to do it. keep in mind this can be dangerous if you're not safe. follow all safety guides you see on the products and that site if you go that route.

I second the http://reranch.com suggestion, as I've just ordered from them, and they tell you everything you need to know about refinishing/touching up your guitar.
