I think that maybe you think it is more complicated than it really is.
The simplest definition of 'open chord' is a chord that does not require barring. Hence, a chord that has one or more open strings in it.
Usually that means the basic first position chord shapes like G, D, Em7, etc, though it could also include non-barre chords played further up the neck if they use open strings (like Cmaj7 played x35500 or C#m7 played x46600).
