Here's my experience:

I use a 2x12 Marshall and mic with a SM57. I mic about two inches off the edge of the cone, and a quarter inch off the cloth and get a great reproduction out of the monitors.

Right now I'm sticking my amp in a closet, mic'ing it, and closing the door so I can crank the tubes and not worry about blowing everyone away. I have a Carvin Nomad 112 with a line out, but I naively assumed that if I was using the line out the speaker wouldn't produce sound. Is it bad to unplug the cable to the speaker? Will it damage the speaker in any way? I'm not really considering doing this, but I'm just curious. If I wanted to use the line out and not have to deal with the volume of the amp, could I just unplug the speaker?

It won't damage the speaker but it will damage the rest of the amp - possibly very expensively. You should never use a valve amp without the correct impedance load across the output transformer.

NO!!! NO!!! NO!!!

I'm very glad you're not really considering doing this. If you actually would do this, you would "blow" your output transformer, which is probably the most expensive thing on your amplifier to replace, and the replacement you find may cause your amplifier to sound like a completely different beast than the amp you bought in the first place.

If you're not going to plug a loudspeaker in, you at least need to have something (properly rated for your amp) like a "HotPlate," but you need to make sure that whatever you plug in has high enough impedance for your amp.
