When I first started playing I had trouble stretching my fingers three frets for a chord so I would tune down a half step and put a capo on one. The strings also had less tension and it made it easier for me to learn. It was tough when I finally decided to take the capo off and tune the guitar to E.

I think you should just train yourself to stretch your fingers rather then take a shortcut...

I like to drop to E flat or D, eaven drop D, for some super fast finger rolls . Its nice to change things up. But whenever i leave it tuned a weird way overnight I fell like i'm missing something when I wake up.

well also the problem with dropping the tuning for any length of time is your fingers get used to that tension then you go back to standard adn its' killer... i ran into that a couple summers ago... since them i'm rarely out of standard for any length of time.
