Kind of hard to pick a manufacturer & say their guitars do this or don't do that. Most of them have so many different models you can find just about anything, even a Fat Strat with 2 humbuckers.

You could look into a particular style of guitar, though. Try a semi-hollow (along the lines of a Gibson 335, but you can get them in all kinds of price ranges from many different makers). I mostly play a Washburn HB-30. I have always found it to be very versitile, and can pretty much do anything from blues (what really made them famous, Lucille) to rock (they were huge in the 60s-70s) to country. Double humbuckers may have a hard time getting that signarure Strat sound if you need it, but other than that they're really versatile.

Just a thought.
