Ok, so if you were to plug the acoustic guitar into the Roland acoustic amp; that would still leave the keyboard, bass, and 3 vocalists to go into something else. Looking over the specs for the different KC models, it looks like this might be doable with the 500. But I really don't think the KC models are the best thing for your situation..... I'm thinking maybe a small powered mixer/2x speaker cabs PA system would work better. (get to that later)

Ummmm... hate to burst your bubble, but I really don't think it's possible to get 8 mono channels with all the KC amps (at least not the 100 or 300). The way that you would go about increasing the number of channels you have would be to take each of your sets of stereo inputs and plug two different instruments in them (one into the left side, and one into the right side).
I think the KC-100 and KC-300 each have two sets of stereo pairs along with two mono inputs (allowing you to get up to 6 mono channels)... but the KC-500 does have four sets of stereo inputs, so you could (theoretically) have 8 mono channels. The one thing that is not good about hooking up your system in this way is that you don't usually have independent volume control over each side of a stereo pair. I'm not sure how the KC's handle this, but I'm assuming that for each pair of inputs, you'd only have one volume control. I haven't been able to find a picture of the input section of a KC-500 to check and see.
Also, there is only one EQ control on the KC amps. There's no way to set a different EQ for each channel.

I told you earlier I was thinking of a small PA system. Well, here's why: Musician's Friend (and many other retailers) have a lot of small, portable PA systems that include a small powered mixer (usually with 4-6 channels) and two speaker cabinets. One big advantage this setup has over the KC amps is that you can spread out your sound.... it doesn't all have to come from just one speaker. Another advantage is that you can have complete volume and EQ controls for each channel (whereas if you were to cheat and plug two mics into one channel on the KC's, you'd probably not have an individual volume control for each channel and most certainly would not have an EQ control for each channel.)
The one I found at Musician's Friend that looks the most promising is a Crate setup. It has 6 channels, each with a 2-band EQ and volume controls. It also has a 3-band master EQ and a reverb effect built-in (which can also be set individually for each channel). It has 160 watts of power running to two 10" Crate speaker cabs. Price new is $420 (which is over your budget),
but they also have a "Scratch and Dent" special on it right now, which is priced at $365 (a lot closer to your budget). Anyway, these are just my thoughts. I was just thinking that a small PA system would give you greater flexibility and control over your setup.
