I have always understood Jesus' words here as referring specifically to the Passover meal he was sharing with them.

He was telling them, "Hey guys, this is the last time we'll do this together here on earth."

The ability to eat bacon is the second-best benefit of the New Covenant - after membership in Christ through His Death, Resurrection, and Ascension, and every benefit from that and all the means of grace in the Church and the hope of resurrection and life eternal - is counted
