Herbs and spices

What are your favorites and least favorites? Are there spices that ruin a dish for you?

I love cinnamon and nutmeg. I think oregano improves the flavor of most savory dishes. I'm not a fan of cumin or tumeric. How about you?

Paprika is good sometimes and not
I like basil.
Oregano goes good with Italian or non-Italian dishs
Cinnamon is good, but a little intense if you pour too much
Mint is great

You can put fresh nutmeg with just about anything....and I do put it with just about anything.

I'm fond of spicy seasoning. The hotter the better. Have a dislike of Cinnamon though. After I was dumb enough to take that challenge, I've decided to NEVER do that stuff again.

I thought that challenge was stupid. I didn't do the challenge but I remember one time where I sprinkled some cinnamon on a muffin and ate it. I got a horrible spice in my mouth.

i use turmeric and cumin very sparingly (like only when a dish requires it) so i don't like curry either.

loves: nutmeg, cinnamon, ginger, ground cloves, cardamom, basil, sumac, saffron

i'll use parsley and cilantro (which i don't love) but my go-to fresh herb is basil, and i'll even use it as a sub for those two.

i do not, but i do have a mint plant (which i also love) that came with my house. i haven't harvested any mint from it because it grows partially underneath the house and fat raccoons like to roam the backyard, but...i may.

Real Paprika (the kind you have to get at a specialty grocery store), Cayenne Pepper, Chili Powder, Cumin, Turmeric, Cilantro, Thai Basil love 'em all.

In fact, I could probably name like 100 other herbs and spices I like. The only one I'm not super fond of is Anise. The problem, I think, is when it's either overpowering, or out of place. Like, if there were nutmeg and cinnamon in my INFINITE alarm chili. I just don't think they'd be welcome there.

Parsley, I feel, is way overused but very good in certain recipes.

Flies, gnats, and snails all love basil. I have given up on trying to grow basil outside in my herb garden, because it attracts so many pests. I have a plant that I grow inside.

Fennel and rosemary grow really well for me. I would upload a picture, but I seem to have lost that skill and I have no patience for re-learning things today.

Yes! Pimenton is a staple in our house. Smoked, hot, Spanish paprika

I got it in my nose. Was blowing chunks of the stuff all night. It burnt so much. I can still smell it months later.
