Spatchcock

We have thought about spatchcocking our turkey this year for Thanksgiving. Has anyone done this? Do you have suggestions about how to go about doing it?

A spatchcock, otherwise known as "spattlecock", is poultry or game that has been prepared for roasting or grilling by removing the backbone, and sometimes the sternum of the bird and flattening it out before cooking.[1] The preparation of a bird in such a manner for cooking may also be known as butterflying the bird. The term "spatchcock" is used when the backbone is removed, whether or not the sternum is removed. Removing the sternum allows the bird to be flattened more fully

Correct.

Get your mind out of the gutter folks. It's a serious question here. It should technically speed up the cooking process.

I made two spatchcocked turkeys on the smoker yesterday, and will do another on Thursday. It cooks faster and more evenly, and the carcass is easier to pick clean.

Well guys, we did it. It may not have been the proper way, but it has been done. Plus, it cut the cooking time down to a little less than two hours for our fifteen pound bird. We spatchcocked and won.

It was quite tasty. I prefer the skin to be crispy though and this was not crispy at all. I don't think we anticipated it cooking that quickly so we would need to remove the foil earlier to allow for crisping. There's always the next time.

What was your cooking process? Getting crispy skin is always the hardest part for me. This year I dry brined the bird uncovered in the fridge overnight, and added a teaspoon of baking powder to the brine. I got pretty good skin, but still not quite how I wanted

We brined ours overnight the night before in some spices that Leighann picked up from the store and water. I'm assuming that's a wet brine. We cooked it covered the entire time. I am thinking the fact that it was covered is what kept it from getting crispy. Of course, it also didn't dry out, so I don't know. It could be a trade off.

Wait, do you want crispy skin, or not? I thought you want crispy, but bravesfan007 seems to have intentionally defeated that result.
