I love to take a whole salmon filet, skin on, and plop it skin side down on the cooler side of the grill, with the cover down. Just salt and pepper is enough, but Italian seasonings work well, too.

You don't have to flip it, but if the skin starts to char, you can just slide it onto a few stacked pieces of aluminum foil.

It's amazing.

Had some marinated raw fish tonight, apparently the dude left it in lemon juice over night and it "cooked" its'self in the juice. it was Nice.

Ceviche. Tuna is good for this although you can use pretty much anything. I like tuna with onions, tomatoes, cilantro,.... yum
