I think it was the Tillamook Medium Cheddar I currently have in the fridge at home. Just to have it around for whatever. Haven't actually used it yet... Been snacking some Tillamook Extra Sharp Cheddar with some crackers lately.

Also been shaving down a nice chunk of Pecorino in salads and stuff, used up some packages of fresh mozz in salad applications (fresh local cherries, fresh mozz, lots of fresh mint, balsamic, EVOO, salt, good thing). Here at the Ms' cabin, it appears Provolone and Swiss have been the sandwich cheeses of choice.

Mozarella and made Pizza Bagels... it's the closest thing to pizzas that don't make me sick. I'm not sure why but anything I order or any frozen pizza makes my acid reflux unbearable. Pizza bagels not as much.

i can't find a "what are you making RIGHT NOW" thread, so this will do. (also i am lazy and didn't check the second page, whatevs.)

i just bought sharp shreddded cheddar for mac and cheese, and before that i got soft local monterey jack just for the heck of if. right now i am making lazy girl grilled cheese - toast in the toaster oven, then a little butter with cheese on top back in the toaster oven.

best christmas gift ever.
