Not enough. My family has been on a sort of Vietnamese food binge lately, of which cheese takes no part.

I have some Tillamook cheddar and some feta. I should go buy more at some point.

Sadly, all I have is some unknown variety of blue that is probably a little past its prime.

It is very tasty. It is slices. I found it at Walmart. The other new ones I saw were Habanero Jack and Black Pepper White Cheddar. I bought all three, and all three are insanely good. If they keep them around, I will definitely keep buying them.

Brie, colby-jack, pepper-jack, parmesan, feta, cream cheese, and... I think this little chunk is gouda. I also think there is some queso fresco in the freezer, but it must be hiding under the frozen bananas.

in my fridge now:

Shredded Parm
Tillamook 3 year old Vintage white Cheddar (in black wax, not plastic (3lb wheel)

In the freezer:

2x 2lb Tillamook 2 year old vintage white cheddar (i love this stuff seriously, it's like crack)
2lb Tilamook pepper jack

misc other cheeses, not sure. I recently got a new fridge and was actually shocked that about 1/3 of the items in my freezer were cheese.

seems that some types do. I've had no problems with sharper cheeses, but I've never tried freezing soft cheese (and I never, ever buy mediums).

Honestly, I love things like soft goat cheeses, feta, blue cheese, etc but I loathe cheeses that should be sharp but are mild/medium (cheddar, I'm looking at you).

Frankly, every time someone sells a mild (especially mild smoked) provolone, God actually sheds a tear.
