My SIL made an eggplant parmesian with the best fresh parmesian I've ever tasted. We'd alread throw the label out, so now begins my wild hunt...

Well you might be able to order it online directly from Tillamook's website, but it might be no longer available. It's a special anniversary cheese. I got mine at Costco though. so delicious, but incredibly strong & sharp.

In a jalapeno/pancetta macaroni & cheese casserole, couldn't really taste the pancetta or jalapeno over the cheese flavor.
