"Pull off about half a cup of fat from the turkey drippings. Scrape the bottom of the tray to get some of the turkey bits. Put the fat in a skillet and add about half a cup of flour. Stir over high heat until smooth, then slowly add your water or turkey broth – oh, about four cups. Stir till most of the lumps are out. Season with salt and pepper."
