| I love basically all kinds of meat. Chicken is probably my least favourite. It's so mediocre no matter how much better than beef it is for you.
Actually, lutefisk is my least favourite, since we're including fish here. I'd eat it again in a more legitimate manner (properly cooked, dressed, and served).
Basically everything else is delicious though! Alligator is really really good! I would try kangaroo once if I had the opportunity, but I'd feel bad eating it anymore. They are too cool.
I couldn't eat dog unless it were a survival situation.
Meat stuffed meat is good. I had filet mignon a few months ago for the first time. Bacon wrapped steak. Good stuff. |

| Down here, ceviche is pretty common. We just call it raw fish. I think the main difference is we use coconut milk as well as the lemon juice and such.
I don't know that I'd be down for steak tartare, but beef carpaccio is on my must-try foods.
As for one of the original questions, I haven't been able to find andouille down here, so I substitute it for chorizo. Oh, and I use shrimp/prawns too.
I had an alligator sausage po'boy when I was in New Orleans, and that was pretty decent. Although the aftertaste wasn't my favourite. Thankfully we also had deep fried crawfish tails! YUM!
There's a Cambodian sauce that goes with rare, red meat called pahok. LOVE it. So far it's the only way I can enjoy a really rare steak. |

| Chicken is versatile, inexpensive, and can be incredible in slow-cooked meals. Brined and smoked chicken with a really great rub under the breast is awesome. Chicken Cacciatore is out of this world.
In fact, I think I could rank my favorite foods like this:
1. Hamburgers (as long as I'm the one who cooks them)
2. Chicken Cacciatore
3. Tabbouleh
Alligator is hit-or-miss in my opinion. I don't need to eat it ever.
Since we're including seafood here, a big ol' slab of wild salmon plus some salt and pepper, on the grill = absolute magic. My favorite method is to build a fire with the coals banked on one side, cook open over direct heat till the skin starts to crackle, and then transfer it to several sheets of aluminum foil off the direct heat and shut the grill till it's done. Perfect every time. The oils in the fish rise up to the surface and it's like it butters itself.
And I agree with FTS that deep fried crawfish tails will make almost anything better.
