Aero offloads some work off your CPU onto your GPU, so it could actually make things faster if your graphics are significantly better than your processor.
30% RAM usage in Vista or 7 really isn't that much. High RAM usage is due to Superfetch intelligently allocating RAM for oft-used programs. Trust me, you want Windows to use all of your RAM.
