What knives do you use?

what knives do you use at home/work?

i currently study hospitality for school.
and i've had somewhat of a passion for cooking.

so i went ahead and bought myself a set of global knives.
i got them for $250, as opposed to $550 (which they retail for here).

however before i could even use them, my 8" global chefs knife went missing.
i thought someone stole it, but i was thinking that if i was going to steal a chefs knife, i might as well steal all the other knives?

hopefully i just misplaced it in my room or house, but i remember putting it into my knife box at school, along with all the other knives.

so without a chefs knife, i was in trouble.
so i ordered a 10" wusthof classic from germany (got it for $120 shipped, as oppposed to $300 retail here).

i got it in the mail today.
i havn't used it, but it looks fantastic :P

I've always wanted a decent global chef's knife. How'd you get such a good deal?

Right now I'm just using a cheap, dull chef's knife that I had during culinary school. Oddly enough, someone else had the exact same knife, and I'm 99% positive that they switched knives with me when I wasn't looking. The one I ended up with has a small chip in the blade. Grrr. Well, I'm not too mad about it anymore. Anyway, I'm kind of waiting to get a new knife (even though this one sucks) until I can afford to get a really nice one.

That's why you keep a lock on your box, kids.

Rachael: Chefs has good prices on cutlery.

I am pretty fanatical about my mom's 10" Henkel's chef's knife, and her 7" santoku. When I am cooking with friends, I usually take a few Henkel's knives along, and a friend of mine brings her Wusthofs. I think if I were forced to choose between the two brands my head would explode trying to choose.

i did have a lock on my box.
in fact, i changed the one that came with it with a masterlock combination one.

I got the knives over ebay from germany.
be careful with the global's though, because there are alot of fakes.

i got them from a seller with a very high reputation.
:P.
seemed like he worked with wusthof, because he had almost every range.

My favorite is a 6" Calphalon chef's knife I got at Ross for $16.
