| Ingredient Discoveries. There is always something new to use when cooking.
What new favorite have you just "discovered"? Maybe you've just begun to cook with it, or maybe it's something you've always used but now use it differently. Post it here, along with WHY you like to use it.
Mine: Mascarpone Cheese.
I love it! It's the perfect texture, and wonderful for both desserts AND pasta sauces. |

| I am a relatively huge fan of exploring pepper right now. Black pepper, I mean. Something about it eludes me. And that's bad. When I don't understand a flavor match, I put that flavor in everything I eat to try and figure it out.
As in, even on donuts.

| Smoked sweet paprika. Fantastic as a rub on pork or chicken, and as a part of marinades or spice rub mixtures.

| I've discovered that vinegar can actually be tasty in very VERY small amounts.
I've also discovered that yogurt makes an excellent base for marinades.
I've also discovered thai curry and coconut milk.
Next discovery on the agenda is Middle Eastern food.

A lot of times the acids that give them that nice tang when they're uncooked disappear, which means the fruit will be something like a ghost of its former self. Vinegar will fix that right up. Like hot melon salad, cherry roast glazes, etc. It's verra nice.
Just... don't try it with apples and cranberries. Though that really should go without saying.

| I don't know if it counts as an ingredient, but I had no idea you could eat raw snap peas. I love em!

| I've always loved Cilantro, but I've been using fresh cilantro alot lately....
probably because we have a bunch of it for Shredder to eat. |

Possibly one of the yummiest cheeses I have evah tasted.
Also, I randomly discovered possibly THE best comfort food ever. And it isn't too terribly bad for you. Take a mushroom, pull the stock out, put a leetle bit (depending on the size of the mushroom, you don't even need a full teaspoon) of mayo (if you don't like mayo, try sour cream, but that would be very different) on the inside of the 'shroom (spread it around nicely), and sprinkle on some sharp feta cheese. Heaven! The meatiness of the mushroom contrasts nicely with the feta, and the mayo seems to be just about the right thing for holding it all together. |

| MAYO.. I've always known mayo is the best ingredient ever..
2 pieces of white bread.. with mayo and REGULAR chips..
You just can't go wrong with mayo. mmmm. lol, and on meat sandwhiches too.
I always hated black pepper and I've been cooking lots of porkchops and steaks lately, and have used lots of salt (I love salt) and pepper.. and relaized it does the flavor justice. I'm not a meat eater but LOVE meat when it comes to loading on the pepper WHILE cooking. yes yes.. mmm

I used to detest anything that was spicier than say...bread.
