| This is an easy recipe for carnitas.
Preheat oven to 350 degrees farenheit.
Take a family back of country style boneless PORK ribs, Rub crushed garlic over them.(I use minced in the jar) Sprinkle Kosher salt. Bake in roasting pan for 2 hours covered. Uncover and let bake for a half hour more. Pull out of oven. Let rest 15 Minutes. Shred meat with two forks. Put in corn tortillas and add lettuce, tomatoes, onoin, cilantro(chinese parsley) hot salsa or diced jalapenos.
excelente. Just like mama used to make.
Substitute flour tortillas to make burritos.  always good with a bottle of xx  or O'douls for those who can't. |

Orange-Chocolate Scones (mmmmm!)
1 3/4 cups all-purpose flour (or try with other flours)
1/3 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, chilled and cubed
1/2 cup miniature semisweet chocolate chips
Orange juice (get the whole carton, you'll see why.)
1 Preheat your oven to 400 degrees Fahrenheit. Normally I use a baking stone to bake these on. (try pamperedchef.com) If you use a baking sheet, spray it with nonstick stuff. I actually think that putting butter on a paper towel and rubbing it on the pan works a lot better to not stick, but suit yourself.
2 In a big bowl, combine the flour, sugar, baking powder and salt. Now, use your hands to add the butter, and squish it all together with your fingers. Coat the butter completely with the mixture, etc. until it looks like many small crumbs. Stir in the chocolate chips. NOW for the Orange juice: start by pouring in a little bit of orange juice, and mix it all together, trying to form a dough. Keep adding little by little until it just coats everything. Try not to get too much as it will be hard in the next step.
3 Flour a big counter really well and put the dough onto it. With floured hands, pat it with your palms into a large circle about 1/2 inch thick. With a biscuit cutter (a regular round cookie cutter could work, too) cut out the scones, pushing the dough scraps together for the last few, if necessary. Transfer the scones to the baking sheet.
4 Bake in preheated oven until golden brown, at least 12 minutes. Keep a good eye on them after that. (I don't remember how long they took last time I made them.
This supposedly makes 12 scones, but I always end up with more than that. They're really super-filling, too. |

| Tzaziki
(Greek yogurt and cucumber salad)
2 cups plain yogurt (preferably 2% or higher milk fat content, for a thicker tzaziki)
1 cucumber, seeded and grated
Juice of 1/2 lemon, or 1 tbsp lemon juice
1+ clove garlic, crushed
1/2 cup olive oil
Salt, to taste.
Combine the cucumber, lemon juice, garlic, olive oil and salt with the yogurt in a medium sized bowl. Refrigerate for a few hours, preferably overnight.
Serve with bread, in a wrap or a sandwich, or as a side dish. Excellent in a donair or on a pita. |

| Bachelor Masterpiece Salmon Cakes
A guy at work gave me this recipe and I tried it today. Be prepared for a block party in your mouth.
Ingreeds:
1 Can pink salmon
1 cup finely crushed regular potato chips or saltine crackers
1 egg
Pick all the bones and stuff out of the salmon, mix it really well the chips/crackers and egg. Form into patties (Should make about 4) fry in a little vegetable oil in a pan and be amazed. I added some vegetable spice mix and a squeeze of fresh lemon juice after they were done.

| Tara's Sheppard's Pie
1 lb hamburger meat
1 lb frozen sweet peas
1 lb frozen corn
1 medium onion diced
1 clove garlic minced
Lrg pan of mashed potatoes (real or boxed)
1/2 lb mild cheddard cheese
Spices: Salt, pepper, onion powder, garlic powder
Brown onion, garlic, and hamburger meat in a skillet
Make the mashed potatoes
In a large casserole dish (9x13) add the peas and corn (still frozen) the meat, garlic and onions mix together
Sprinkle with spices and a couple of handfuls of the cheese and mix
Over top spread the mashed potatos then the cheese on top of that.
Bake for 35-40n minutes
Should serve about 6-8 people and still tastes really good as a left over.
To save a little bit of time, I make mashed potatos for dinner the night before andmake enough for both dishes.

| If you need a good bread recipe...
6 1/2 cups bread flour (for wheat bread, substitute 3 1/2 cups of it with whole wheat flour)
2 Tbsp. oil
1/2 ounce of yeast (that's two of those little packages, or about a tablespoon)
2 tsp. sugar
2 tsp. salt
2 1/4 cups warm water
In a large bowl, mix together 3 1/4 cups of flour and all of the remaining ingredients. Once combined, add in the rest of the flour one cup at a time, or until the dough's stiff enough to work with. (If you have a mixer with a dough hook, this is a lot easier; otherwise, your hands will work best here. Just make sure they're clean.)
Turn the dough out onto a floured surface and knead until it's smooth. Put it in a lightly oiled bowl, cover it with a damp towel, and let rise for about an hour, or until it's doubled. When doubled, punch out the air, shape it into loaves and put it in a lightly greased loaf pan. (If you don't have one of these, freeform a loaf and bake it on top of a lightly greased cookie sheet instead.) Let rise (again, under the damp towel--it keeps the dough from drying out) until doubled again.
Preheat the oven to 425 degrees F. Bake the bread for about 25-30 minutes, or until it sounds hollow when you tap it. Let cool for about half an hour (or less if you can't wait that long  ).

| Beef and Rice Casserole 1lb. hamburger, browned
2 beef bouillon cubes, dissolved in 2 c. boiling water
1 can cream of chicken soup
1 c. uncooked rice or 2 c. uncooked egg noodles
Mix well. Place in covered casserole dish. Bake 1 hour at 350
Note: For if your using brown rice use 3 c. water & bake 30min longer. |

| Chicken tortilla bake first of all i want to ask if there are any guys here that cook cause i feel so alone. second these things are alot like enchiladas but they are not quite
3 cups shredded cooked chicken
2 4 oz. cans chopped green chiles
1 cup chicken broth
1 10 oz can of cream of mushroom soup undiluted
1 10 oz can of cream of chicken soup undiluted
1 small finely chopped onion
12 corn tortillas
2 cups shredded cheddar chees divided in 2 halves
combine chicken chiles broth soups and onion set aside; warm the tortillas layer half of tortillas in bottom of greased 13"by9" pan then add 1 half of the chicken mix on top of the tortillas then top with half cheese. repeat layers
bake uncovered at 350 for 30 minutes
6-8 servings |

Alright you start with 2 pieces of store bought bread make sure its nice and soft. Then you take some Jif or Peter pan Peanut butter, and then if you like strawberrys you can use strawberry jelly, if you like grapes you can use grape jelly, what ever kind of fruit you like you can probably find that kind of jelly. then you spread the jelly and the peanut butter over the store bought bread put the slices together and enjoy, but be sure to savor the taste. |

| Try this recipe... Shrimp Alfredo Sauce over fettucine Noodles If You Like Italian food, and seafood. Try this.
Make some Fettucine alfredo
10 oz fresh fettuccine or tagliatelle
15 tablespoons unsalted butter, at room temperature
1/2 cup freshly grated Parmigiano Reggiano (Parmesan), at room temperature, plus extra cheese to pass at the table
1 cup heavy cream, very lightly whipped
Salt and freshly ground pepper (use white pepper if you have it)
3 Tbsp. vinegar
shrimp (fresh or frozen)
Noodles:
SET the pasta water to boil.
TIMING is important with this dish - ideally the pasta finishes cooking when your sauce is ready - although the sauce will 'hold' for a short while on very low heat. If you are using fresh fettuccine, it can cook in as little as 2 minutes (plus the time it takes your water to boil), so you must prepare your ingredients accordingly.
Alfredo Sauce:
Do not add the shrimp yet. Prepare that in it's own Pan
IN a pan large enough to hold all the pasta , melt 8 Tbs of the butter over low heat.
ADD slowly the slightly whipped heavy cream and whisk either with a whisk or stir continuously with a wooden spoon till it is hot and slightly reduced. (variation: use 1/2 of the cream here, add the rest just at the end before you add the pasta.)
ADD slowly the grated cheese as you continue stirring or whisking.
COOK the pasta.
ADD salt and pepper to taste.
Shrimp:
Put the shrimp into it's own pan and add whatever spices you wish. Afterwards add the rest of the butter in with the shrimp, adding vinegar in and some salt and white pepper.
Let it simmer continually stirring it with the butter for 15-20 Minutes.
WHEN done add it in with the alfredo sauce and stir.
Finish:
ADD the cooked and drained pasta. Mix well with a wooden spoon.
TURN into a warmed serving bowl, or directly onto warmed plates.
PASS grated Parmesan at the table.
Alfredo alla Scrofa!!

| Kingsport Toast
2 eggs, slightly beated
1/2 cup of milk
1 1/2 tablespoon sugar
1 1/2 vanilla extract
1/4 teaspoon salt
1/4 teaspoon cinnamon
Three slices French bread
Chocolate chips
Mix the eggs, milk, sugar, cinnamon, vanilla, and salt in a small saucepan or similar container. Soak French bread in the mixture, turning each piece over to ensure both sides are soft.
Transfer the bread to another pan. Slice each piece of bread into four smaller pieces, and brown the bread until both sides are golden brown. Place a chocolate chip in each.
Serve without syrup (ala British eggy toast) |
