| Wow, tasty steaks! I made this for the first time on Valentine's Day. Deeeeeelishus!!
Place four 1.5" thick fillet mignons (fillets mignon?) in a shallow dish and drizzle with about a tablespoon of extra virgin olive oil. Rub oil into the steaks, season with salt and pepper and let them sit at room temp for about an hour.
Melt 3 tablespoons butter in heavy skillet over medium-high heat. Add one small onion sliced thin and sauté until it starts to soften, about 3 minutes. Add about 1/2 lb of sliced fresh mushrooms and 4 crushed cloves of garlic; sauté until mushrooms are just tender, about 4 minutes. Set aside.
Heat another heavy skillet over medium-high heat. Add steaks to skillet; fry (pan sear)until cooked to desired doneness, about 5 minutes per side for medium-rare. Remove steaks and place on tray under foil to keep warm.
Add 3/4 cup beef broth, then 1/4 cup brandy to the skillet you cooked the steaks in, and bring to boil, scraping up browned bits. Add mushroom mixture. Boil until liquid starts to thicken, about 5 minutes. Add about a cup of crumbled blue cheese; stir just until cheese melts, about 1 minute.
Spoon sauce over steaks. Sprinkle with another small handfull of blue cheese.

| Heres a good one  : Fudge Cream Pie (with a merange topping!  )
1 pet-rite piecrust baked
1 1/3 c. sugar
1/4 c. flour
1/4 c.cocoa
1 tall cn evaporated milk
3 egg yolks beaten
2 Tbs. butter
1 tsp. vanilla
3 egg whites
1/2 tsp. vanilla
1/4 tsp. cream of tartar
1/3 c. sugar
Have baked piecrust ready. Mix sugar, flour, and cocoa in a saucepan. Gradually stir in evaporated milk. Cook and stir over low heat 5 min. Stir a small amount hot mixture into the egg yolks. Return egg-chocolate mixture to saucepan. Cook and stir until very thick. Remove from heat. Stir in butter and vanilla. Spread into piecrust. Breat egg whites and cream of tarter till they stand in peaks. Add sugar and vanilla. Mix well. Put on pie and bake until golden brown. 325 degrees. |

| Chocolate "soda" Hey all,
I found this recipe online for chocolate "soda." I thought it sounded wierd, but I wanted to try it.
In a glass, mix:
2 tsp. chocolate syrup
2 Tbs. milk
add:
1 C. lemonade
Then mix in:
2 Tbs. ice cream
1 ice cube
It's actually pretty good. No one else has a good recipe for this, do they?

| Ok, this is one of the easiest to make desserts ever but it's sure to be one of the favorites. Get a trifle bowl. That is the hardest part. Ok, get some cool whip and some chocolate chip cookies. I'd say two tubs of coolwhip and two packages of cookies. Fill a bowl with milk. Next, make a layer of cookies inside the bowl, remembering to submerge each one in the milk first. Then the next layer needs to be cool whip then cookie then cool whip until you're at the top. To finish it off, use the rounded part of a spoon to fluff up the top and crumble a dry cookie over the top. There, you're done. Easy easy job, it looks nice and I've never gotten a single complaint, except that I didn't bring two of them. |

| Knock your significant other's socks off with this dessert recipe - I just developed this. It's simple, fancy, and delicious.
Vanessa's pomme flambé
------------------------
Serves two
Ingedients
1 Gala apple, chopped into 1/2 inch cubes
1 tbsp butter
2 tbsp brown sugar
1 oz whiskey
Heat the butter in a frying/saute pan on hight heat. Add the apples, saute for about a minute. Add the brown sugar, mix well and coat apples. Turn heat to low.
Cook the apples until brown sugar starts to carmelize, a couple of minutes at most. Don't let the apples get too soft. Sprinkle lightly with salt.
Meanwhile, heat whiskey in a small saucepan on LOW. DO NOT BOIL. Pour the whiskey over the apples and light with a flame. I use a long-handled lighter, you don't want to be close to the pan. The pan will go up in flames if done correctly (That is, if the whiskey is warmed but not to the boiling point).
Shake the pan to give it a dramatic flaming effect to further impress your significant other. Let the whiskey burn down and go out. If the pan still smells heavily of alchohol, light again the burn the rest. Note - the sugar may start to burn, watch for a heavy boiling of the sauce after a long period of burning. Then it's a good idea to burn it out.
Serve apples and resulting sauce immediately over vanilla ice cream.
Enjoy, it's good.

| Pretty simple dessert item or classy snack:
The Star City Parfait:
2 cups (whole milk) ricotta cheese
4 oz. cream cheese (let it soften before preparation)
3 tablespoons of honey
2 tablespoons of sugar
Orange juice
Lime juice
4 cups mixed fruit: raspberries, grapes (seedless), star fruit and mango.
6 dried persimmons
First: spoon a tablespoon of lime juice over each persimmon and let it soak in.
Second: Whip ricotta, cream cheese, honey, and sugar until mixture is smooth and uniform. Add 2 tablespoons of orange juice and 1 tablespoon of lime juice and blend.
Third: Mix fruit and toss with 2 tablespoons of lime juice. Sprinkle 6 tablespoons of orange juice and let the mixed fruit soak for a bit. Put on some Bruce Springsteen.
Fourth: Put each persimmon in a parfait cup or a snifter or what have you. Spoon some of the ricotta/cheese/etc. mixture on each one, then top with fruit, spoon some more mixture, add more fruit, etc. until each one is covered as you desire!
You'll get about six servings. |

Buy jar of cookie mix from kid in 4h
dump contents into medium bowl
Add one egg
add one tsp. vanilla
add 3/4 cup of butter or margarine
mix thoroughly
drop onto greased cookie sheet
cook at 350 for 10-13 minutes |

| Island Ceviche with Pickled Onions
1/2 pound pompano fillets, or other firm white fish fillet
1/2 pound bay scallops
Vegetable oil, for coating
Kosher salt and pepper
3 ounces fresh lime juice, about 3 limes
1 medium solo papaya, halved and seeded
1 cup finely diced Vidalia onion
4 serrano peppers, seeded and diced
1 small jalapeno, seeded and diced
2 plum tomatoes, seeded and diced
1/2 cup chopped cilantro
2 ounces tomato juice
1 tablespoon white wine Worcestershire sauce
1/2 tablespoon capers
1 tablespoon Mexican-style hot sauce
Tortilla Chips, as accompaniment
Pink Pickled Onions, recipe follows
Cut the fish into pieces resembling the size of the scallops. Separately toss the seafood with a little oil and season with salt and pepper.
In a saute pan over high heat, sear the fish and scallops, about 30 seconds on each side. The middle should still be raw. Work in batches so you don't overcrowd the pan. Place seafood into a glass dish and coat with lime juice. Glass is best, as it won't react with the acid in the juice. Marinate, refrigerated, overnight.
Remove the flesh from 1/2 a papaya and cut into medium dice. Slice the remaining 1/2 into long strips. Next day, pour off the lime juice and gently fold the drained fish and scallop mixture together with remaining ingredients and diced papaya. Serve with tortilla chips, sliced papaya, and Pink Pickled Onions.
Pink Pickled Onions:
8 ounces champagne vinegar
1/2 cup sugar
2 serrano chiles, seeded
2 medium red onions, thinly sliced
In a small saucepan, bring the vinegar, sugar, and chiles to a boil. Stir until sugar is dissolved. Remove from heat. In a plastic container, place the sliced onions and pour the liquid over them. Place the container in an ice bath to cool. Serve chilled with meats and seafood. These are also great on sandwiches.
Yield: about 2 cups
Not my own recipe. I saw it on the food network and thought it was too yummy not to share.

| Get a popcorn kettle. Make popcorn, and about a minute before the kernels pop, take off the lid and pour some red hots over them.  Delicious!
-2/3 cup of red hots to 1 cup of popcorn.
If you're wondering what to do with your leftover turkey, try this:
-Mix the old dressings you have in your refrigerator w/ orange juice and worchestier(sp?) sauce(mix should be just enough to cover the turkey with). Heat the turkey in a sauce pan and when sizzling, pour dressings over it.
Slowly stir until it is half browned.  Eat up!
