| Chicken/Vegetable Linguine with Lemon-Herb white sauce.
Boiled chicken in water until it was almost completely cooked. Cut the chicken into thin strips. Sauteed it in olive oil until cooked completely. (Meanwhile, linguine is boiling in water). Put veggies (sliced red and green peppers, onions, zucchini, and crushed garlic) in with chicken. Drizzled olive oil over all, covered with lid, left it to sautee/cook - stirring and mixing occasionally. Made white sauce... mixed in pesto and lemon juice. Once everything was all done, I mixed it all together. Yum. |

Quick "recipe" -
I mixed Italian bread crumbs, Italian herbs, molasses and just enough water into less than a cup and a half of Bisquick baking mix. I spread a thin layer of that onto a greased, aluminum foil-lined baking sheet. Separately, I thinly chopped a leaf of cabbage and a few slices of ham lunch meat, buttered a heated pan, and cooked that on the stovetop, along with a bit of frozen corn and a little garlic powder. I poured in a teaspoon or two of leftover "gravy" from making egg rolls (even parts soy sauce, water and corn starch) when the cabbage began to soften just a bit. I removed the filling from the burner and put layers of it atop the breadish doughy mixture, blending in a little of the dough with the filling each time. I topped the whole thing off with more dough and set it in the oven at 350 F for about half an hour.
It's absolutely delicious. I'll be making more sometime soon.

| Chicken marinara over linguine in a tomato/merlot reduction.
I cut up a handful of mushrooms, an onion, and a half of a bell pepper, seasoned and sauteed those. I put on a pot of water. While that was going on, I took two chicken breasts, seasoned it up a bit. When the water comes to a boil, I added linguine and salt. When the vegetables were done sauteeing, I stirred in a little store-bought red sauce, a dash of merlot, and then put in the chicken, and let it simmer. After the chicken had cooked almost all the way through (turn halfway through cooking), I made the veggies a bed, and put the chicken on top, and then placed slices of mozzarella over the chicken, then put the pan in a 400 degree oven. After about 5-10 minutes, I took it out. I took the chicken off, mixed the vegetable/sauce mix with the drained linguine, then served the chicken on top.
'Twas delicious. Of course, I wasn't paying attention to how much of anything I put in, or how long I was cooking things for... |

| I made sushi rolls with steamed "crab" and veggies on Sunday, and crab spring rolls / crab rangoons with three different dipping sauces (honey / lemongrass, honey / ginger / soy, and sweet & sour / tamarind) on Monday. We've been enjoying the ingredients we found at a nice little Oriental market within walking distance of our apartment. They even gave us a free book ($30 retail!) when my wife went back to get some bigger seaweed sheets for the sushi rolls!

| The same thing I cooked 2 nights ago....Pasta Mediterranean.
This time, I chopped the olives finely and added more garlic. I was very pleased with the end result.
It's going in my cookbook, fo sho. |
