I really have only busted out the thing a few times myself. But it's handy to have when you don't have time to stand in the kitchen and make something, and you need to have dinner ready at about a certain time. There are a couple of recipe ideas in the little booklet that comes with it, and if you're feeling creative, you can always add to them on the fly.
Mrs. M, I would love a make-ahead meal recipe thread. I have to admit, I'm running out of cooking ideas these days. I was starting to branch out when I had more food, though. I made my first burritos ever recently, and Art really liked them. I used the leftover black beans and made a black bean soup of sorts, and that was also a hit. I should probably make that again tonight.
Last night, I made cheesy chicken and rice casserole, a la Campbell's cream of chicken soup label. I completely blanked on dumping in the last of the frozen corn before placing the pan in the oven though, and Art didn't want any when I asked, so he didn't have any veggies with his chicken and rice. Whoops.

| Okay, I'll work on the "make ahead" thread in a while. Maybe not today.
Today I am making beef stew in the crockpot. This is very easy to make.
2# beef, cut into 1" cubes
1 cup flour
1 tsp salt
1/2 tsp pepper
1/2 cup red wine
1/2 cup water or vegetable broth
1 clove garlic, minced
3 medium potatoes
1 medium onion
3 carrots, sliced into 1" pieces
Add salt and pepper to flour. Toss the beef cubes in the flour until coated. Brown the beef in a 2 Tbsp oil, turning until all sides are browned. You may have to do this in two batches. Move beef to crock pot, set on high heat. Add wine to pan and deglaze the stuff that's stuck to the pan, scraping with a spatula. Add to beef.
Cut onion, potatoes, and carrots into 1" pieces. Place on top of the meat. Add water or vegetable broth and garlic. Cover, cook on high for 5 hours or on low for 8-10 hours. Stir once or twice toward the end of the cooking time. |

| Tonight I fixed grilled tilapia with a sour cream/dill/lime sauce. The fish was grilled with just a little bit of olive oil. The sauce was 1 cup of light sour cream, 1/2 tsp dried dillweed, 1 tsp dried chives, and 1 tsp lime zest. Heat the cream mixture over low heat and serve over the fish. Very nice. |

| Last night I made a Creamy Basil Tomato soup.
It turned out quite nicely. Joel doesn't like tomato soup and he loved it. |

| I haven't cooked since Sunday...eesh.
For Easter I made Deviled Eggs, Baked Beans, Parmesan Asparagus w/ Curried Pea Paste, & Honey Bourbon Lemonade.
Yummeh.
The day before, I made Coconut Lime Shrimp over Angel Hair. I like the coconut flavor to be in the sauce, not stuck to the shrimp. |

| Today I made some whole wheat pasta dough. (Oh how I wish for a pasta press!)
I then made some homemade spinach ravioli for tonight. I'm going to make an olive/mushroom sauce & some garlic bread straws as well. |
