Just made some insanely good meatballs.

All beef (about 2 lbs, I'd mix some pork in if I had it, but it's alright), about 2-2.5 cups of coarsely ground bread crumbs (day old bread in the blender real fast), three eggs, salt, pepper, one bell pepper and one onion quickly sauteed with seasoning and touch of balsamic vinegar at the end to deglaze and also blended (don't puree, leave some texture), oregano and other herbage to taste. Let sit in the refrigerator at least an hour, and then form into meatballs. Quickly sear in hot pan with olive oil, just to brown, and set in baking dish, cover with favorite marinara sauce. Bake for 30 min. at 400 (for large meatballs, I like 'em big). Then serve with pasta or in a baguette toasted with mozzarella for a meatball sub.

They're delish.
