| Tonight we had Chicken Parmesan. It was incredibly tasty - I think quite a bit for the ground cayenne pepper.
Chicken breasts dipped in seasoned breadcrumbs and egg whites and then layered with diced tomato sauce, mozzarella and parmesan. |

| I am in the process of making my own version of Irish Seafood Pie with Champ and Cheese, using the fish I have in my freezer at the moment....Crab and Mahi Mahi.
("Authentic" seafood pie has scallops, salmon, crab, and lobster.)
It looks like it will turn out nicely. I'm just waiting for my potatoes to cook.
I'll post this recipe later if it works out. |

| Tonight I made Penne & Chicken Tenderloins with Spiced Tomato Sauce, caesar salad and chocolate pudding.
Getting everything ready is my largest problem right now...it takes me forever to get stuff prepared/cooked then something else is cold.. |
