| CHRISTMAS DINNER.
Yum!
On the menu:
- Mashed new potatoes (skin on - I was too lazy to peel Idahos)
- From-scratch stuffing; I bought a loaf of five? grain bread from the (Publix - not too fancy) bakery, cut it up, toasted it, threw it in a bowl, poured in a bottle of hard apple cider, threw in some walnuts and pecans (shoulda toasted 'em first, but whatev), a bag of mixed berry dried fruit, and a fresh honeycrisp apple
- Vegetarian "gravy" to go with the mashed 'taters: i made a roux of butter and flour, threw in some onions, mushrooms, vegetable stock, half and half and then pureed tempeh and tried to mix it all better with an immersion blender. It turned out pretty tasty because of the mushrooms and whatnot, but I've never had tempeh before and the texture was kind of weird and grainy. But all in all, pretty successful.
- Green bean casserole. Fresh green beans, NO canned mushroom soup - no no no, it's so much better when you make the mushroom sauce yourself. I did slack however, and use canned fried onions. Still tasty nonetheless.
- And for dessert, a pumpkin pie for me with a walnut-graham cracker crust that I forgot to pre-bake, but still tasty; and two pecan pies. One for my mom (not really a fan of pumpkin) and one for my friend's dad. For some reason, all her pecan pies end up a disaster; they either won't set or burn in the process of baking/trying to get it to set. |

| My newest creation from mom's delicious leftover baked salmon... salmon potatocakes!
1 part leftover baked salmon fillet
1 part mashed russet potatoes
Worcestershire sauce, a healthy dose (maybe 1 tbsp for each cup of potato)
Salt/Pepper
Egg
Flour
Yellow corn meal
If you don't have leftovers, make some! Glaze a whole salmon fillet with honey and mayonnaise, and generously season with salt and pepper. Bake at 350 until done.
Mix the salmon and potato together until salmon has broken up sufficiently to incorporate into the potato, and don't overmix. Add the seasonings and the egg (if salmon/potato mixture is 3 cups or more, add two eggs... and I hope you're hungry!), and mix. Add enough flour to where the mixture is stiff enough to shape by hand.
Shape balls in the palms of your hands, and flatten slightly to form cakes. Place cakes in a small bowl with corn meal one by one to coat.
Heat a large skillet with vegetable oil to coat the bottom to medium high heat. Place cakes in pan when hot, do not overcrowd the pan. Flip when the cakes form a golden brown crust. Remove from heat.
Serve warm with your favorite tartar sauce recipe (I like a diced pickle, diced half onion, and some good ranch dressing), a slice of lemon, and a bed of field greens, halved cherry tomatoes, and a balsamic vinaigrette. |

| Oatmeal raisin cookies, for my roommate. Despite not having any cinnamon, nutmeg or other spices...they turned out okay! (Much better with walnuts in them.) |

| Lamb/Beef Kafta. Mmmmmmmm. I was surprised at how well it came out since I've never done it before and since we like it so much at the Lebanese restaurants around town. It helps to have the house stocked with a lot of unique spices.
