I made baked lemon chicken, with a mushroom/garlic/onion gravy. Long grain wild rice and lentils with roasted garlic, peppers, and onions. Green beans with red peppers and onions. Homemade Italian bread in a bread maker and Cherry Cheesecake!

I had people over for dinner last Saturday night.

Picnic with old friends today. My superultrasecret fried chicken strips (I just had an epiphany, so I will make them again next weekend and they will be more awesome), soda bread and a strawberry vinaigrette salad.

Chili, for dinner, a few nights ago. For breakfast a couple days ago, I made "garbage" omelettes - eggs (obvs) with some leftover chive cream cheese whisked in, leftover beans (from the chili, I'd hydrated & boiled a whole bag of beans), leftovers from the previous night's dinner at The Melting Pot (yum) including mushrooms and asparagus and some cheese. They were tasty!

I made muffins this morning, but they were quick-mix, so those don't really count, and I made popcorn for an afternoon snack. The real stuff is so much better than bagged (barf).

Followed by two pumpkin rum pies

Followed by three pumpkin rolls

Two peanut butter pies

3 batches of buckeyes

and one pecan pie.

It was baking day yesterday.

Not entirely a traditional dinner here. Potatoes au gratin from a box, a whole (albeit small) turkey breast, gravy from the pan drippings, and something I came up with on the fly - Asian deviled eggs. Those were surprisingly good, and pretty easy to make. I'll figure out the recipe and post it sometime.

My family's Thanksgiving philosophy is traditional, but all about quality ingredients. That said:

MENU:

Turkey with Red Wine Gravy
-This was my mom's dish. I don't know how she basted the turkey, but the drippings were complimented with red wine and pepper to taste, and thickened up with tapioca starch.

Stuffing with Veggies and Giblets
-My mother just made the boxed Stove Top stuffing (mostly because with the right additions, that stuff is just plain good), adding generous amounts of onion, celery, and mushroom, and of course, giblets baked with the bird.

Green Bean Shitake "Casserole" with Apple Sausage
-My main contribution. I started by browning up some packaged apple chicken sausage, and used that as a base. I then added the sliced shitake mushrooms to saute for a bit, seasoned with some salt and pepper. The fresh green beans were then quickly added, and cooked through, but not too long to keep the green and the crunch, and the whole thing was removed from the pan. In the pan, then, I made a quick roux with some butter and flour, then added a couple of cups of milk, to make the base of my casserole. The veggies and sausage were added back into the pan when the sauce had thickened up a good way, and some cheddar cheese was added. After the whole mixture came together, I put over the top some french fried onions, and shredded cheddar cheese, and put the whole thing under the broiler to brown the cheese, and form a delicious crust. Serve hot.

Penne + Cheese
-My mother acquired a great smokey aged cheddar, so we used that with a traditional baked macaroni and cheese recipe, using penne pasta, and good fresh breadcrumbs. This is just made by boiling the pasta, forming the sauce with some sauteed onions, equal fat and flour to make another roux, chicken stock and some milk for the sauce base, and generous amounts of cheese. Some medium cheddar and the smokey aged cheddar were used to balance.

Roasted Garlic Mashed Russets
-Pretty simple, the Russets were boiled while two heads of garlic with the tops lopped off and smothered in good olive oil are roasted in the oven. When the potatoes are tender and the garlic is roasted brown and soft, the cloves are mashed into the potatoes. Chives and sour cream are mixed in, and salt and pepper are added to taste.

Pumpkin Cheesecake
-Just your standard pumpkin cheesecake recipe. Mostly pumpkin and cream cheese with some sour cream. Oh so good.



I was quite proud of my pseudo-casserole. It came out quite delicious.

I boiled down the turkey carcass last night and made turkey noodle soup. It was nothing to brag about, but we sure are getting our monies worth out of that turkey.
