As a chemist, I've often thought it would be "fun" to make some cheese, but only really in the way that it would be "fun" to learn Russian or something like that - it's a nice thought, but am I really willing to do the work? Perhaps I will.

I'm a pretty plain-Jane, grocery-store, is-it-yellow-or-white? kind of guy when it comes to cheese. I do like sharp cheddars, but my wife prefers mild. I like colby jack on sandwiches. I like monterey jack with venison sausage and a ritz cracker.

My favorite cheese is Cream Cheese (Mainly because it makes Cheesecake, my favorite dessert *grins*)

I'm pretty much obsessed with Chevre now. We just bought a tomato basil Chevre at the grocery store, and it is wonderful as well with the vinegarette. Mmmmmmmmmmmmmmmmmmmmmmmmm.........

I once tried that cheese that you eat with wine. I gagged so bad. I'm not exactly a cheese conniseur. All I eat is Cheddar, Swiss, Mozzarella, and Neufchatel (Cream Cheese) But i know something about cheese. neufchatel is pronounced Newf- Shuh- tell. Yay!

So, Costco is a pretty rad place lately.
They have had this neat little cheese demonstration for about a month now.
Today we picked up some Wensleydale with cranberries and some Cinnamon and Cranberry covered Goat Cheese.
Mmmmmm.....
