Onions & Spinach Side Dish

I haven't made this for forever, but I remember how.

I chopped up and sauted in butter a whole onion, then added it to heated frozen spinach. Then I added sour cream and garlic salt to taste. Ooh, just looking at the picture makes me drool!

Anyone else have ideas/recipies for onions and spinach together?

Yeah. But if you wanted, you could add ground beef for protein, and noodles for starches, and.... Yum!

It does look like dip. Here is a recipe that we've enjoyed at family gatherings for many years.

Spinach Dip


2 cups sour cream
1 cup mayonnaise
1 envelope Knorr brand Leek soup mix, dry
1 box frozen chopped spinach, thawed and drained
4 green onions, chopped
1 can water chestnuts, drained and chopped

Mix all ingredients well. Chill at least 30 minutes before serving.

Serve it in a bread bowl. To make the bread bowl, cut the top fourth of a shepherd loaf off horizontally. Remove the bread from the center to form a "bowl". Pour spinach dip into the bowl and serve with the bread you just removed and with your favorite crackers. We like Harvest Crisp 5-Grain crackers the best at our family gatherings.

On the original recipe: I would try putting the onion through a few pulses in a food processor or a blender, then making a sauce. Then prep the dish as usual, but finish it by making a cheese topping and browning that either in the oven or with a torch (think creme brulee). Then use it as a side dish for something else. Or maybe as a dip for bread.
Either way, it looks delicious.

I love spinach. My favorite is the creamed spinach at Boston Market. I found this recipe, but I haven't tried it yet.
