Go to a used book store or book warehouse and buy a few cookbooks. They help a lot.

I'm all for stir fry...stir fry with shrimp, or chicken, or beef, or tofu. I generally prefer to cook shrimp and chicken stir fry w/ about 1/4 orange juice, beef and tofu w/ garlic and ginger. Buy a big bag of Jasmine rice, some good frozen vegetables and you're set. We eat various stir frys at least 3 times a week and it really is easy to mix them differently enough that you don't get sick of it. I'm also a HUGE fan of rice noodles (which you can buy at any Oriental market. There's a great one in Tampa that you can get them at) w/ ginger garlic sauce, steamed broccoli, beef and sesame seeds.

Other than that, I second Magic Spatula in recommending soup. Sometimes I'll make a pot of soup to last us the whole week (not every meal, mind you, that would be awfully uninteresting). I'm not talking classic chicken and noodle either. My personal favorites are Italian Wedding, Smoked Bacon and Corn Chowder, Sausage and Lentil, or a straight barley. They're also perfect to pair with sandwiches for a larger meal, or something fresh like a quick bruschetta for lunch.
