| Genoise Ingredients
One 6-inch cake
75 grams cake flour
15 grams butter
3 eggs
75 grams granulated sugar One 9-inch cake
125g cake flour
35g butter
5 eggs
125g sugar Full sheet pan
300g cake flour
60g butter
12 eggs
300g sugar Procedure
1. Prepare pans for baking
2. Sift flour and set aside
3. Melt the butter and set aside
4. Combine the eggs and sugar
5. Warm the eggs and sugar mixture over a bain-marie untill they are approx. 110 degrees F (I just do it till its just warm to the touch, or just above your body temp)
6. Remove the eggs and sugar from the heat and whisk untill they tripled in volume. (in a mixer of corse not by hand)
7. Fold the sifted cake flour into the egg mixture in several additions.
8. When all of the flour is incorporated, but the batter is still a little streaky, fold in the melted butter.
9. Pour the batter into the prepared pans.
10. Bake at 350F for approx. 25 minutes, or untill done-- the top should be medium-dark brown; the cake should pull away from the sides of the pan; the center of the cake should spring back when gently touched; a skewer inserted into the center of the cake should come out clean.
11. Immediately after removing the cake from the oven, unmold it onto a cooling rack.
