Piezo...

I plan on for now running the piezo output into the valve Jr with 12 at7 in it. Now, in the future, what would be a good preamp to run an L.R. Baggs into before running it to the classic 120?

There are a lot of choices. I use the SansAmp Acoustic DI. It also has an XLR output for the case that you might want to run it direct to the PA (which is what I usually do).

would running direct to power amp be the equivalent of that?

By PA, I meant Public Address system, which assumes high-fidelity loudspeakers in addition to a power amp. I usually don't care for "dirty" tone or tone that lacks high end with my acoustic, so that's why I run it straight to the PA.

But as long as you're ok with the response curve of your loudspeaker, running to PA and running to your power amp (which is connected to your loudspeaker(s)) would be functionally equivalent.

for now my vintage 30s are running clean. (I don't play loud enough to drive the cab into speaker distortion) Yes a seperate cab is optimal... But my wife probably would not agree at this point in time . Im basically trying to figure out how is the optimal setup with a small footprint for now. Also keeping prices low is a good thing. I have my amp set up generally quite heavy on the highs as I hate a muddy tone. The response curve of the speaker may be problematic. That is why I have been toying with the valve Junior to make it clean and high end responsive. However, I know it isn't transparent perfectly.
