I usually just play the bass line with my left hand, and chords/melodies/harmonies with my right hand.
For my right hand, I usually just try to come up with some stylish riff, and apply it to every song that I can. I would suggest listening to pop songs that are piano-driven, and (by ear, if you can) learn the little stylish tricks that the pianist does. After that, you can modify them and make them your own.
For example, I've taken two ideas from Evanescence's "My Immortal," and I use them all the time. The guitarist in my band even said to me "you need to come up with a name for that;" referencing one of my riffs.
