I think the Yuuzhan Vong were an interesting twist for the EU. I think they may come off a bit too conventional in a film, with the whole warrior vs. worker caste, etc. They may also come off as too invincible, too Borg-ish to the general audience. The whole "grown" technology, the whole social caste system, etc.
But there are twists that I think would make it seem original and compelling (SPOILERS) - the fact they don't register in the Force as the Jedi expect, the fact they manage to take over Coruscant, etc. The whole idea of them worshipping gods that demand them to remake things, their patent disbelief in the Force - and that their society uses mutilation and xenobiological grafting as marks of social status...that could impress audiences and create an epic story that challenges the Jedi in a way moviegoers don't expect.
I think, to use a Star Trek comparison, it might remake how people view the Star Wars universe just like the Borg opened up tons of possibilities for the Star Trek world and gave them a new and different threat than other alien fleets, space exploration, etc.
However, I think it would be good to focus on some non-Jedi actions. The new trilogy really lacked a Han Solo-type character. Perhaps they could either use the Black Sun as we've seen them in the EU or write a new story based on a group of smugglers/outlaws/bounty hunters tied up with the Black Sun.
