Woe of Tyrants (they don't classify as Christian but their whole Kingdom of Might album is christocentric and is one of the best metal albums I've ever heard).
Life In Your Way / Conveyer (Conveyer is still relatively new, but good lord they are amazing)
Hope For The Dying (aside from the vocals this is one of the best Christian metal bands I've ever heard).
Extol / Pantokrator / Drottnar (it's a tough call there)
Stryper (not my cup of tea, but they really did a lot of groundwork for modern christian metal)
